Nestled on the banks of the River Ness in Inverness, Uile-bheist Distillery and Brewery, aptly named after the Gaelic word for “monster”, is revolutionising Scotland’s whisky and beer scene with a bold commitment to sustainability. As the first distillery to open in Inverness in over 130 years, Uile-bheist blends ancient Highland traditions with cutting-edge green technology, crafting exceptional spirits while treading lightly on the environment.

Harnessing the Power of the River Ness

At the heart of Uile-bheist’s eco-innovation is its pioneering use of the River Ness. The distillery draws water from shallow wells along the riverbank, utilising a water-source heat pump system to provide heating and hot water not only for the distillery but also for the adjacent Glen Mhor Hotel, apartments, and Waterside Restaurant. This system, complemented by rooftop solar panels, saves approximately 250 tonnes of carbon emissions annually, positioning Uile-bheist among the lowest carbon distilleries globally.

Sustainable Brewing and Distilling

Uile-bheist’s commitment to sustainability permeates every aspect of its operations. Spent grain from the brewing and distilling processes is repurposed as livestock feed, reducing waste and supporting local agriculture. The distillery sources malted barley from Bairds Malt, located less than two miles away, minimising transportation emissions

In a nod to its dual identity as both brewery and distillery, Uile-bheist employs brewer’s yeast instead of traditional distiller’s yeast, resulting in a unique fermentation process that lasts a minimum of 96 hours. This extended fermentation yields a fruity, ester-rich spirit with notes of banana and vanilla, offering a distinctive Highland whisky experience

Reviving Inverness’s Brewing Heritage

Beyond its environmental initiatives, Uile-bheist is rekindling Inverness’s rich brewing history. The distillery produces five core craft beers, including the Forest Dweller West Coast IPA and the Dark Horse Stout, marking the first beers brewed in the city in over three decades . Embracing a local-first approach, 80% of their beer is sold within a 30 mile radius, further reducing their carbon footprint.
