For more than two decades, the concept of Uile-bheist fermented in our minds until it completely took over our lives.
From the rise of craft brewing in the ‘90s to the ascendance of craft distilling in the noughties, the ideas, products, images, flavours and creativity flowing from the industry inspired us to realise our long-held ambitions and turn our plans into reality.
Uile-bheist is the result — Scotland’s first and only ‘brewstillery’, merging the best of both worlds, but with a singular purpose: to create the finest artisan whisky and beer.
The site chosen for Uile-bheist is no accident. It’s here that the first documented sighting of the Loch Ness Monster took place. Legend has it that in 565 AD, Saint Columba banished a “water monster” back into the river when he saw it attacking one of his disciples.
Celebrating this and other monsters, myths and legends from local folklore, Uile-bheist connects Scotland’s past with its present, breathing new life into the tales that have captivated and enthralled humankind ever since we first sat around the fire in caves.
