Our distillery
Nestled on the banks of the River Ness, Uile-bheist is a new low carbon craft distillery, brewery and visitor experience, dedicated to the art of Scotch Whisky distilling and craft brewing.
Our distillery in the city
The first new distillery to be built in Inverness for 130 years, Uile-bheist is an independent, modern distillery using some of the most advanced stills in Scotland, engineered by world-renowned coppersmiths Kaspar Schulz.
Our whisky production methods are innovative, while maintaining principles of Single Malt Scotch Whisky production which remain unchanged for hundreds of years in the Highlands of Scotland.
Meet our Master Distiller
The design and production of Uile-bheist whisky is overseen by our Master Distiller – Andrew “Drew” Shearer, who combines a Masters Degree in Brewing & Distilling from Heriot-Watt University with a wealth of previous experience in the production of the finest whiskies.
Drew brings knowledge and passion to every drop of the finest artisan whisky that he curates, combining traditional distilling techniques with just a little modern flair. What makes Uile-bheist unique?
Uile-bheist will be a Highland Single Malt Scotch Whisky like no other. Made with 100% locally sourced barley and pure water from the fast-flowing River Ness, the wash is fermented using Uile-bheist’s own brewer’s ale yeast for a unique character. Our stills, as well as being proportionally tall for their size, have a ‘boil bulb’ where the body of the still meets the neck. Together, these create added reflux, leading to a lighter spirit.
Our new make spirit is then matured in the finest, handpicked ex-bourbon and ex-sherry casks, along with other unique casks from around the world. “
