At Uile-bheist Distillery & Brewery, we’ve spent the last few years reviving a lost tradition—bringing distilling back to the city for the first time in 130 years.

The Uile-bheist Discovery

The name Uile-bheist (pronounced EWL-uh-vehst) is Gaelic for “monster,” a nod to the myths that haunt the River Ness. During your stay, you can join us for a Discovery Tour, where the worlds of craft beer and single malt whisky collide.

Our distillery is a “brewstillery” powered by the river itself. We use a pioneering water-source heat pump system to keep our carbon footprint as small as a Highland mist. You’ll see our gleaming copper stills, smell the roasted malts of our five signature beers, and learn how we’re blending 19th-century traditions with 21st-century green tech.
