2022/23 Programme
Our 2022/3 Uile-bheist Cask Programme was a remarkable success, with 100 casks filled for our valued customers. This inaugural programme included a mix of ex-bourbon and ex-sherry casks, each selected for their exceptional quality and characteristics.
Our customers now own a piece of Highland whisky history, with each cask maturing and developing its distinct flavour profile. The overwhelming response and enthusiasm have set a high standard for future cask programmes, solidifying Uile-bheist’s legacy in the world of premium whisky.

We have co-developed state-of-the-art custom-made stills that are specifically engineered to meet our high standards for quality and sustainability whilst respecting the traditional brewing and distilling methods.
2024 Cask programme
Own a piece of Inverness history, with our Uile-bheist cask programme.
Uile-bheist will be a Highland Single Malt Scotch Whisky like no other: wash fermented with brewer’s ale yeast for a unique character, distilled in bespoke stills designed to give us unprecedented control over our new make spirit, and a highly meticulous cask selection process for maturation in charred, unpeated and peated casks.
Charred Quarter Cask
Charred casks significantly enhance whisky’s flavour profile. The heat generated from charring breaks down lignin in the wood, producing vanillin, which imparts sweet vanilla notes. Caramelised wood sugars add flavours of caramel and toffee, while the breakdown of hemicellulose introduces toasted oak and dark chocolate notes. By choosing a charred cask, your spirit will develop into a rich, luxurious whisky with complex layers of sweetness and depth.

Peated Quarter Cask
Our peated casks offer a distinctive smoky profile, evoking rich flavours of earthy peat, seaweed and subtle sweetness. These casks impart a robust character to the spirit, with the phenols present in the peat adding maritime and earthy aromas. Balanced with our unpeated spirit, this whisky’s complexity and depth create a truly memorable and multifaceted experience.

Unpeated Quarter Cask
Unpeated casks bring out the natural essence of our unpeated spirit, highlighting notes of vanilla, honey and fresh orchard fruits. This option offers a smoother, more delicate flavour profile, perfect for those who appreciate refined and balanced whisky. By selecting an unpeated cask, you will enjoy a whisky that elegantly showcases its inherent purity and subtle complexities.
